Chicken Pot Pie

Yields: 4 servings

Homemade chicken pot pie. You might end up with too much filling. Don't worry too much about the exact ratios of ingredients, it's pretty forgiving.

Ingredients

  • Frozen pie crust (top and bottom)
  • 1/4 yellow or sweet onion, diced
  • 1/3 cup flour
  • 1/3 cup butter
  • 2/3 cup milk
  • 1.75 cups chicken broth
  • 1.5 cups cooked chicken breast, diced
  • 1 bag peas/carrots blend, or 2-3 cups chopped similar vegetables
  • 1 tsp poultry seasoning
  • Salt and pepper

Directions

  1. Preheat oven to 425, and take out vegetables to thaw if frozen.
  2. Melt butter in a large pan over medium heat.
  3. Saute the onions in the butter for a minute or two.
  4. Add flour, mix with the butter until it starts turning into a paste.
  5. Add the chicken broth and milk while stirring to avoid clumps. Add salt and pepper.
  6. Continue cooking over medium heat until it starts to thicken, then add veggies and turkey. Mix it all together then turn to low heat.
  7. Prepare the pie crust according to its package directions. Fill the bottom crust, put the other crust on top, then bake for 40 minutes or until crust is golden brown.
