Green Chile and Bacon Wagon Wheel Mac and Cheese

Yields: 5 servings

This is the cheesiest mac and cheese of all time. I guess wagon wheels call for that. All the holes in the wheels will be filled with cheese! Cheese. Cheese! CHEESE! The bacon, tomatoes, and green chiles complement each other and the cheese perfectly.

Ingredients

  • 16 oz wagon wheel pasta
  • 6 slices bacon
  • 10 oz diced tomatoes with green chiles
  • 4.5 oz chopped green chiles
  • 2 cups shredded monterrey jack cheese
  • 2 cups shredded pepper jack cheese
  • 2 cups shredded sharp cheddar cheese
  • 2 cups whole milk
  • 1/4 cup all-purpose flour
  • 1 tsp ground white pepper
  • 1 tsp salt

Directions

  1. Cook the pasta and set aside. (You can do this in parallel with later steps)
  2. In a large saucepan or dutch oven, cook the bacon over medium heat until partly crispy. Remove the bacon, leaving the fat in the pan.
  3. Add the flour to the pan and mix quickly, cooking for a minute.
  4. Add the milk, salt, and white pepper, then mix everything together.
  5. Stir in the cheese gradually until it's all melted.
  6. Chop the bacon, then stir in the tomatoes, green chiles, and bacon. Remove from heat.
  7. Mix the pasta into the cheese sauce. Enjoy!
