Mozzarella and Spinach Spaghetti

Yields: 4 servings
Ingredients
- 16 oz spaghetti
- 28 oz crushed tomatoes
- 8 oz spinach
- 8 oz mozzarella pearls
- 1/2 cup cheddar cheese, shredded
- 1/4 yellow onion, diced
- 4 cloves garlic, minced
- 1 tbsp olive oil
- 1 tbsp oregano
- 1 tsp thyme
- 1 tsp basil
- t tsp red pepper flakes
- Salt and black pepper to taste
Directions
- In one pot, start cooking the spaghetti. You can continue by preparing the sauce in parallel. Once the spaghetti is done cooking, drain it. If you have lots of time left working on the sauce, toss the spaghetti with some olive oil to prevent it sticking together.
- Add the olive oil to another pot, or very large pan, and set to medium heat.
- Once the oil is hot, add the onions and red pepper flakes to the pan and sauté for a few minutes.
- Add the garlic to the pan and sauté for another minute or two, then reduce heat to low. Continue stirring for a minute while the oil cools down, to avoid the garlic burning.
- Add the crushed tomatoes to the pan and stir in the onion and garlic pieces. Mix in the oregano, thyme, and basil. Feel free to experiment with whatever seasonings you'd like to here. Add salt and black pepper to taste.
- Return heat to medium until the sauce is heated. Then, mix in the mozzarella pearls and spinach.
- Combine the sauce and spaghetti in one of your pots. Mix it together, then mix in the shredded cheese, which helps make the sauce richer and creamier. Enjoy!
