Ram-Don with Mushrooms

Quick and easy recipe for a creamy ramen noodle dish. Ram-Don (aka Jjapaguri) is made by cooking Jjapagetti and Neoguri noodles together in one pot. It’s yummy chewy noodles in a Jjajang sauce that has a hint of spicy udon flavor. This dish appears in the movie Parasite and if you love Jjajangmyeon then you will love this combination.

Ingredients

  • 2 packages ramen (ex: 1 shin spicy ramen, 1 neoguri seafood ramen)
  • 6-8 medium sized mushrooms or equivalent, sliced
  • 1 green onion, thinly sliced (optional for garnish)
  • 1.5 tbsp butter
  • 1 tbsp olive or sesame oil

Directions

  1. Boil enough water to fit both ramen blocks in a medium pot.
  2. Heat oil in a frying pan at medium/high heat.
  3. Add ramen noodles to pot of boiling water, along with dried vegetables. Don't add the seasoning packets or oil/soup base.
  4. Fry the mushrooms in the pan. Turn off heat once they start becoming soft.
  5. When the ramen noodles are soft, save a little bit of the water (about half a cup) and pour the rest out into a strainer.
  6. Add the cooked ramen noodles and vegetables to the frying pan with the mushrooms. Add the saved water.
  7. Add butter, ramen seasoning packets, and ramen oil/soup base to the pan. Mix it all up on low heat until the butter is melted, the mushroom slices are mixed in, and the seasoning is evenly distributed.
  8. Remove from heat and serve topped with green onion slices.
