Roasted Jalapeño Poppers

This is an easy snack to make with very few ingredients, and it's great for sharing with friends.

Ingredients

  • Jalapeño peppers (each pepper will make two poppers. I like to use larger peppers for this recipe.)
  • Cream cheese (about 3 tablespoons for every pepper you use)
  • Shredded cheese (mexican blend, or whatever you want)

Directions

  1. Preheat oven to 400° and cover a baking pan with aluminum foil.
  2. Cut the tops of the jalapeños off and slice the peppers in half lengthwise. As always when working with hot peppers, be careful not to touch your eyes and wash your hands thoroughly after finishing handling them. I've made mistakes... Don't be like me.
  3. Use a paring knife to cut out the seeds and the lighter-colored stem the seeds are attached to. The seed stem is what gives the peppers their heat: the more of the stem you leave in the peppers, the spicier your poppers will be. If you're sharing with friends, you could consider separating the jalapeño halves into two groups for people to choose if they want spicier or mild poppers.
  4. Fill the now-empty core of each half pepper with cream cheese, and put them on the pan.
  5. Sprinkle some shredded cheese on top of the cream cheese.
  6. Bake the peppers for about 20 minutes. The timing is pretty forgiving, and you can adjust depending on how chonky the peppers are and how much whipped cream you added.
