Spinach and Sun-Dried Tomato Mac and Cheese

Yields: 5 servings

This is a great baked mac and cheese. The sun-dried tomatoes are the best part.

Ingredients

  • 16 oz rigatoni pasta
  • 7 oz sun-dried tomatoes
  • 2 cups spinach
  • 2 cups shredded mozzarella cheese
  • 1 cup crumbled feta cheese
  • 2 cups whole milk
  • 1/2 cup flour
  • 1 tsp salt
  • 1 tsp black pepper

Directions

  1. Cook the pasta and set aside. Preheat oven to 350°. Lightly spray a 3-quart baking dish with nonstick cooking spray and set aside.
  2. In a large saucepan or dutch oven, heat the tomatoes along with the oil they come in over medium heat.
  3. Add the flour, mixing quickly to avoid clumps. Cook for a couple minutes.
  4. Add the milk, salt, and pepper. Whisk together and cook until the mixture starts to thicken.
  5. Add the mozzarella and feta cheese, spinach, and cooked pasta. Mix everything together.
  6. Remove from heat, then spoon the mixture into your prepared pan.
  7. Bake until the top starts to brown a bit, about 30 minutes.
