Spinach and Sun-Dried Tomato Mac and Cheese

This is a great baked mac and cheese. The sun-dried tomatoes are the best part.
Ingredients
- 16 oz rigatoni pasta
- 7 oz sun-dried tomatoes
- 2 cups spinach
- 2 cups shredded mozzarella cheese
- 1 cup crumbled feta cheese
- 2 cups whole milk
- 1/2 cup flour
- 1 tsp salt
- 1 tsp black pepper
Directions
- Cook the pasta and set aside. Preheat oven to 350°. Lightly spray a 3-quart baking dish with nonstick cooking spray and set aside.
- In a large saucepan or dutch oven, heat the tomatoes along with the oil they come in over medium heat.
- Add the flour, mixing quickly to avoid clumps. Cook for a couple minutes.
- Add the milk, salt, and pepper. Whisk together and cook until the mixture starts to thicken.
- Add the mozzarella and feta cheese, spinach, and cooked pasta. Mix everything together.
- Remove from heat, then spoon the mixture into your prepared pan.
- Bake until the top starts to brown a bit, about 30 minutes.
