Courgettes Italian-Style

Yields: 4 servings

Ingredients

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 1 garlic clove, crushed
  • 4-5 medium courgettes, cut into 1cm/½in slices
  • 150ml/¼ pint/⅔ cup chicken or vegetable stock
  • 2.5ml/½ tsp fresh chopped oregano
  • salt and freshly ground black pepper
  • chopped fresh parsley, to garnish

Directions

  1. Heat the oil in a large frying pan and fry the onion and garlic over a moderate heat for 5-6 minutes until the onion has softened and is beginning to brown.
  2. Add the courgettes and fry for about 4 minutes until they just begin to be flecked with brown. Stir frequently.
  3. Stir in the stock, oregano and seasoning and simmer gently for 8-10 minutes, until the liquid has almost evaporated. Spoon the courgettes into a serving dish, sprinkle with parsley and serve.
